Cooks Illustrated just did a review of knife sharpeners and this model came out tops. I’ve never owned an electric knife sharpener before but based on Cooks, who’s never steered me wrong, and due to one very expensive Ken Onion Shun chef’s knife that was damaged, I decided to give this unit a try. I read the excellent instructions and set forth to attempt a repair this fine and expensive knife. I took pictures before, during and after with a Macro lens as this tells the story. So please examine the four images. The first is obviously the knife with the severe nicks. I ran the knife through #1 slot about 10 times. A few pulls were not well conducted on my part as I was getting the feel of the unit and process. But it looked like I got most of the damage honed out. After viewing the photo from the Macro, I decided to give the knife 3-4 more pulls and you can see the results in the 3rd image. Nicks gone. The last photo is after running the knife through slot 2 and 3 about 6 times. The knife feels VERY sharp and of course, I think I totally removed the damage. I’m impressed but I have many more knife’s to work on but none with any real damage. I hope to go over to my Neighbor’s house and sharpen her dull knifes which are not Japanese but put a nice 15 degree edge on them.

I am blown away by this product.

I appreciate good knives. Whether cooking, camping or hunting, I like them to be sharp. Razor sharp. I want to be able to shave with my pocket knife.

My local mobile sharpener recently went out of business, so I’ve been looking for a good sharpening tool. This arrived yesterday, and I’ve sharpened every knife I can find to a razors edge. I’m now trying to sharpen the cheese knives. I probably need to warn my girlfriend. Testing the knives I’m now bald and I’ve shaved half the dog. The cat now won’t come near me. So far no stitches, but the cat might change that.

I started with a cheap Kershaw pocket knife that’s never been sharp. 10 passes on each side through all 3 wheels, and I can shave a grasshoppers belly.

I moved onto an old Benchmade knife that had 2 blowouts on the blade from an electrical arc. 20 passes through the #1 wheel on each side, 10 each on 2 & 3, and I’m now clean shaven for dinner tonight.

On to the Wusthof Classic kitchen knives; the chefs knife can now shave garlic paper thin, the carving knives ……. well they’re better than new.

In short, you’re obviously looking for a good knife sharpener if you’re reading this. If you’re a cheapskate, I easily have 20 s***ty as-seen-on-tv options, or worse, that I’d happily send your way if you’ll pay the shipping. If you want a good knife sharpener for quality knives, or even a good knife sharpener to make the best of that crap your in-laws gave you for Christmas in 1986, buy this. You’ll love it.

The plastic guards in front, back and side area are the first to get chipped up. It does not take much pressure for the wheels to stop. Takes some getting used to. After sharpening my Henkels set the first time, about half the knives were worse than before. But it was not the sharpener, it was me! I needed a lot of practice with this tool. My problem is I did not want to grind the blades down to much. My second problem is using just the right pressure in each cutting station. My third is DON’T use the first station unless you are cutting blades down from 20 degrees to 15. Lastly, practice an even pull movement so each part of the blade gets attention. So 4 stars for ease of use. 5 Stars for results after some practice.

This sharpener is absolutely worth the money! I have bought and used other knife sharpeners in the past. This one easily exceeds cheaper models. Ease of use has to be at the top for this model. Most electric knife sharpeners you can stop the moving mechanism with over pressure. This model does not allow you to use over pressure. The blades come out with a razor edge. You will cut hair off your hand or arm if you follow the directions. So far, all knives have held their edge too. I would strongly recommend this model to anyone. I can’t stop showing off how sharp my knifes are.

I even sharpened a decorative knife that had 0 edge before I started. Even more dull than a butter knife when I started. Now impressively sharp and I stopped early on the knife because I did not need a super sharp decorative knife.

Best thing about this sharpener is it works if it is used as instructed. I have sharpened my own Zwelling Henkles knives to the point they can shave hair. I have sharpened my family members knives and they are amazed by the results, turning knives that have been dull for years into razor sharp cutting tools. It takes patience to hone knives back into shape and it can be done (some take longer than others). The benefits of having sharp knives is enormous. Daily preparation is done quickly and safely if you can trust that the knife will cut through things. The machine does get hot after a while and I limited sharpinging to 2-3 knives at a time ( I have 10 in all, and each can take 10-15 minutes to sharpen the first time). There is a magnet inside the machine to catch filings and it holds well to our counter. I really like this sharpener. It costs more, but it is built to a premium standard and yields premium results

I really like the 15 degree edge versus the 20 degree traditional edge, After reshaping to the 15 degrees usually all you need to do is deburr ever so often using the finest abrasive. Compared to hand methods it gives you excellent control for sharpening all the along the edge due to the very good guide to maintain the angle.

There’s nothing worse (or more dangerous) than a dull kitchen knife. I saw this one on America’s Test Kitchen and love it! It’s easy to use, works on all my knives from paring to chef’s and the edges are razor sharp. I read other Amazon reviewers who say it can be used on ceramic knives … I just got back my Kyocera knives from being sharpened (the company has a free, lifetime sharpening policy) so I don’t need to sharpen them anytime soon. I’m hesitant to try, but might anyway since it’s a long process to send the knives out and wait for their return. Meanwhile my other knives are a joy to use. It doesn’t matter if the knife is expensive or cheap, it does the job extremely well.
