I did a bit of research in reddit’s “AskCulinary” sub-reddit and Victorinox knives were highly recommended to beginner cooks as reliable “workhorse” knives. I have had my set for over a year and all of them are still in great shape. My 8-inch chef’s knife could probably stand to be sharpened at this point. I haven’t had any of them sharpened but I do have a honing steel and my knives cut remarkably well after a few passes on the honing steel.
The knives are lightweight, but don’t feel chintzy. The handles are comfortable and textured so they aren’t too slippery when they are wet. I have fairly large hands and the handles feel comfortable and don’t feel too small.
I highly recommend this set to anyone looking for solid, dependable, general-purpose kitchen knives.
As for the knives, I’d previously bought a Victorinox 8″ chef’s knife from another online vendor and instantly fell in love with it. At the Cooks Illustrated website they’d mentioned that Victorinox has plans to take these knives out of retail stores in 3 years so I started shopping Amazon to get another one as a backup in case I needed another one someday and I couldn’t get them anymore. In addition to the 8″ chef’s knife I was also wanting a Victorinox 10 1/4″ bread knife so I was tickled when I found this set with both those knives and was able to get 4 knives for about the same price as the 2 knives I was shopping for.
My knives arrived today and I made a loaf of bread to test out my new bread knife. I let the loaf sit on a cooling rack for 30 minutes and then tried out my new bread knife. I was instantly very impressed. The interior of the bread although not hot was still very warm and moist and the bread knife sliced through it like a pro without any effort on my part and not the least bit of smashing of the bread.
As everybody mentions the knives are very sharp so watch your fingers and keep them out of the reach of children. I would gladly recommend them to friends and family. I think I may get one of these sets and a sharpening steel for my daughter for her birthday.
